Sunday Food Prep – what went down in my kitchen (9)

Hi there!

Is it just me or is anyone else disappointed that Monday actually made an appearance?

Oh well, I guess it’s a good thing it showed up otherwise we’d never see Friday, right? #brightside

So, I spent a little more time on my feet this weekend than I probably should have.

I really should have put myself in that stupid walking boot but I didn’t. I just kept popping Advil and taking “rest breaks.”

*sigh*

I’ll never learn.

Anyway, I got down to some serious business in the kitchen on Sunday!

I don’t know exactly what hit me but I was a food prepping FOOL yesterday.

And, it wasn’t even that cold out – 40-50s maybe (and yes, that’s cold but it sure beats the 20s!) – but I felt the need to build a fire so I did.

Most awesome fire ever! #madskills

Between the fireplace, my oven, and the kitties who kept occupying my lap every time I sat down, I was as toasty as a marshmallow. 🙂

So, the first thing I made was a loaf of bread.

I’ve mentioned before about tummy issues so I’ve decided to toss out gluten for a little bit and see what happens.

Don’t get me wrong, I know I’m not allergic and I definitely don’t have celiac but it’s worth a shot to see if maybe I have a gluten sensitivity.

I bought this Bob’s Red Mill gluten free whole grain bread mix and went from there. I made one last week and it made great toast that tasted amazing with smushed avocado on it. Mmmmmm

image

I actually bought some gluten free flour but, in order to make the bread rise, you have to substitute something “gluten-like.”

Like xantham gum.

Which, for one thing, I can’t even pronounce and, for another thing, is ridiculously expensive.

I’m not committing to it until I know. For now, I’ll spend $8 on a mix that has everything in it that I need, minus the eggs, fat, and cider vinegar. Yeah, I don’t get it either but it’s a small amount and the bread tastes great so….fine. Cider vinegar it is.

I also stocked up on quinoa so I made a nice big batch.

image

Had some for breakfast this morning – 1 cup quinoa, 1/2 cup milk, heat 60 seconds, add fruit. I also added some raw honey and almond butter because, duh, it’s raw honey and almond butter. 🙂

I snagged an organic chicken at the Harris Teeter and put that in the crockpot for about 5 hours.

I’ve made it before but this time, it literally fell apart when I took it out.

image

After I shredded it, which we’ll use for salads, sandwiches, quick meals, etc, I put all the bones and skin back into the crockpot, added some onion, carrot, celery, fresh thyme, some dried oregano, a bay leaf, and a bunch of water and I set it to LOW for 12 hours.

When I woke up this morning, I had homemade chicken broth that I portioned out into mason jars.

I had to come in to work early so I left them on the counter to cool and Thing 2 took care of freezing/refrigerating them for me.

I ran out of time to snap a picture but broth is broth and my counter pretty much looked like this, like last time. 🙂

Then, for dinner, I made Roni’s beef and sweet potato chili.

image

Holy. Yum.

I pretty much followed her recipe exactly except I added a teaspoon of some super-hot fire sauce I picked up a few weeks ago.

There are only 2 things I would do differently – I would definitely cut the sweet taters into smaller chunks (honestly, I left them pretty big) and I would definitely use a whole lot less spinach. Like half. Or, I might leave it out and substitute something else. Thing 2 wasn’t crazy about it and thing 2’s BF didn’t eat at all because he “doesn’t do sweet potatoes” or pumpkin.

Whatevs. More for me! Cuz, I thought the chili was amazeballs. 🙂

I also roasted some chickpeas but they didn’t turn out very picture worthy. I may or may not have been lulled into a brief nap by the warmth of the fire and a snuggly lap cat. They’re a little on the burnt side. #dontjudgeme

Sunday stuff! (or fun in the park and a little bit of food prep)

Hello, hello!

I know I said I was back last week but, apparently, I wasn’t ready. I needed a little bit more time to focus inward and just be.

It was definitely a needed break!

What really made things better was having Thing 1 come home for a few days.

It was really nice to have her home. I mean, the last time I saw her was in May!!

We hung out, we went shopping, we dined on Chipotle….. #winning

image

We also went out for a little photo shoot in the park with our favorite photographer. ❤

More pictures to come later!

Oh, look, there’s a wall over there! I must practice my handstands! #crossfitaddict

There may or may not have also been some planking and some push ups. 🙂

Then, I got down to business with my Sunday food prep.

Which, honestly, wasn’t as much as normal.  There’s some travelling going on this week and a little bit of extra time at home (don’t forget to thank a veteran!) so I didn’t need as much prepared food in the fridge.

I do, however, need to go to the grocery store because I went to make some quinoa for quick, healthy breakfasts and the box was pretty darned empty. 😦

I only got enough quinoa to try this recipe once this week.

image

Then, I made a loaf of sandwich bread, perfect for toast and, well, sandwiches. 😉

Apparently, the yeast were (hyper)active and the bread hit a growth spurt in the oven. #milehighbread

image

Then, for dinner, I was craving some comfort food so I made some Skinny Shepherd’s Pie. YUM!

The best part is the leftovers!

image

And today, there’s a pork butt in my crockpot and its destiny is to become carnitas tacos for dinner. Stay tuned for the recipe!

So, want to know what happens when you take a little bit of time off from blogging?

180 spam comments in the queue, that’s what.

180.

One hundred. And. Eighty.

Seriously.

The best one?

“staples”

Really. That’s all the comment was.

Maybe they thought my Cinnamon Buns should be a staple in all households?

Well, that spam bot is right! 😉

Sunday food prep – what went down in my kitchen (8)

Hello!

I’d first like to thank you for being patient and understand while I took a little time away from my blog.

I needed the break to think and be in my own head for a little bit.

My grandma was a pretty amazing woman and it’s a little difficult to know that I’m not going to hear her laugh anymore.

Good thing I have it on the laugh track in my head. 🙂

Life won’t be the same without her but I can hear her telling me to stop moping around, get off my ass, and get back to it.

So, that’s what I’m doing. Cuz she’s the boss.

It was DARN cold this weekend. I heard it even snowed in some places!

And by some places, I don’t mean Alaska or Wisconsin or Minnesota. I mean, Tennessee. What the heck? November just started!

Anyway, as luck would have it, our heater is presently not working (service call  made, parts ordered, commence waiting game) but we do have a fireplace!

image

That we used all weekend.

And that Molly stayed in front of the whole time.

I woke up one morning to find her staring at it like she was waiting for the fire to start back up. Haha!

Because it was so cold, I really had no problems with food prep this weekend.

Oh, stand in front of a hot stove/oven all day? YES, PLEASE!!

The first thing I did was make some chili on Saturday night.

I decided I needed to try a new recipe from the new cookbook I picked up a few weeks ago. I love new cookbooks!! ❤

So, I made the chili con carne from The Ancestral Table by The Domestic Man because chili is practically necessary if it’s chilly outside. 😉

image

Holy. Amazeballs. This chili was delicious!

And, there’s plenty of leftovers for lunches during the week. And you KNOW that chili only gets more delicious after it sits for a day or so.

You’ll have to buy the cookbook to get the recipe, though. It’s totally worth it. 😉

(and no, I’m not getting anything from telling you to buy the cookbook except the knowledge that you might soon be eating some amazing new dishes!)

Then, Sunday morning, I got started early and made some cinnamon buns with buttermilk icing.

image

Yes, I’m aware that cinnamon rolls aren’t exactly food prep food but hey, I’m just trying to give you some ideas for what to bake in your oven, maybe next Sunday…. 😉

I also made some Pumpkin Bread.

Tis the season for pumpkin!

image

I kinda sorta followed this recipe out of my 1,001 LowFat Recipes cookbook except I used all King Arthur White Whole Wheat flour, subbed nonfat, plain Greek yogurt in place of the vegetable oil, and used 2 eggs instead of 1 egg and 1 egg white.

This bread is pretty yummy – especially if you slather it with nut butter. Who needs cream cheese when you have nut butter?! Om nom nom!!

Then, because I was craving it – yes, seriously, CRAVING – I made my favorite meat sauce.

image

I love this on top of roasted sweet potatoes, pasta, or even rice.

Hell, I’ve even eaten it straight out of the bowl.

Licked it clean, too.

I’m not proud. 😉

Talk to me: Was it cold in your neck of the woods? Do you have a fireplace? Did you food prep?
